Sophie-Safe Cooking favorite
ingredients Like most of you, over the years I have struggled to
find food products that I can use for Sophie. It's not easy to find things
that are free of all of the top 8! So here's a list of some of the things
that I have found to be most helpful. Please send me your favorites, too,
and I will add them to the list! (I will add items that are free of all 8
most common food allergens: wheat, eggs, milk, soy, peanuts, tree nuts,
fish and shellfish.)
Baking
Spectrum Vegetable
Shortening; Spectrum
shortening is soy and trans fat free, and works great in cookies,
cakes, even frosting!
Coconut Oil; there are loads of companies that sell coconut oil,
including Spectrum. It
works great for baking, but can have tiny lumps, so allow extra mixing
time if you're using it for frosting. Also, coconut has been added to the
FDA's list of tree nuts, to be aware of that if you are choosing to use
it.
Pasta
Tinkyada Rice Pasta; this is by
far our favorite rice pasta. It is easy to make and sturdy enough to be
used even in casseroles or pasta salads.
Mrs. Leeper's Pastas; we like
Mrs. Leeper's, but we prefer the
rice pasta over the corn.
Breads
Deby's Gluten Free Sandwich Bread;
while it's a little pricey, this bread is certainly worthwhile when Sophie
makes her own Sunbutter and jelly sandwich for lunch.
Deby's Gluten Free Pizza Crust; this
has brought back pizza night in our house! An easy to use frozen pizza
crust, we top it with a little sauce and some pepperoni, or get creative
with barbecue sauce and chicken, or some other crazy combo. Have fun!
Wylde Pretzels; Sophie loves these
for a quick after school snack!
Brown Rice Loaf; this is Sophie's
favorite sandwich bread by far.
