Valentines

To spice up your Valentine's Day this year, try having a special breakfast rather than waiting until late in the day to be celebrate.
These pancakes are sure to get your Valentine's Day of on the right foot.

Double Chocolate Pancakes:
  • 2 1/2 C oat flour
  • 1/2 C cocoa powder
  • 1/2 C sugar
  • 1/2 t baking soda
  • 1/2 t salt
  • 2 1/2 C rice milk
  • 1 T apple cider vinegar
  • 2 T oil
  • 1/2 to 1 C mini or regular chocolate chips

Mix the oat flour, cocoa powder, sugar, baking soda, and salt with a wire whisk until the color is even throughout. Pour the rice milk into the bowl with the dry ingredients and then add the vinegar and oil and mix well with the wire whisk or with a rubber spatula. Pour batter onto a hot griddle to the size of pancakes you prefer. Drop a few chocolate chips onto each pancake. Cook until the edges are dry and centers are bubbling, flip and cook until center is no longer wet.
Dust with powdered sugar and serve with fresh or frozen strawberries or raspberries.
